My son is in love with beans. He loves all kinds of beans so we decided to try this new butter bean mash recipe. I’m so glad we did because it’s become our family’s favourite and it’s a delicious surprise for visiting family and friends.
100g of butter beans contain 21 grams of carbohydrates, 8 grams of protein and 7 grams of fiber. Butter beans also contain potassium, magnesium and vitamin B6. This makes these legumes very wholesome.
Give it try, and you will be so happy you did.
Ingredients:
2 Cans of butter beans
2 Cloves of garlic
Half an onion
1 Tablespoon lemon juice
2 Tablespoons olive oil
Fresh chives or parsley
Half a cup of vegetable stock
Pinch of salt and pepper
Saute onions and garlic in olive. Add rinsed butter beans, half a cup of vegetable stock, lemon juice, salt and pepper. Simmer for 5 min. Mash beans and add a little more boiled water for a smoother consistency. Add fresh herbs before serving.
